Does anyone know of a way to export PushPin data to an Excel or similar file? I am working with a few thousand PushPins and it would be nice to have a secondary way to back them up, besides other .est files.

Streets & Trips doesn't have a built-in functionality to export pushpins. You could try to use some 3rd party applications to do that. GPS Babel is a popular one, and there are others, too. Check the following list: List of free software helpful to Microsoft Streets and Trips users
