I'm using an older laptop with only 1 gig of ram. It runs the program ok but when loading lots of poi's it slows it down.

What is the recommended amount of RAM?

All your programs will run faster if you cram your computer full of RAM. I'd put as much in as it will hold. Many times, increasing the RAM speeds up the computer more than an upgraded processor.

Don't quote me but I think the recommended amount of RAM for S&T is 2 gigs.

I'm running it with 1 gig and i am very satisfied. I am using customs POI, but not hundreds. Are you suffering from the .est map file growing size bug (when using a lot of POI) that could help slow things down?

I guess so. When loading a map with a lot of POI's if your zoomed out and move it it takes a second or three to show the POI's again.

Zoomed in and it seems to work fine, less information to display makes it work quicker I guess.
