I don't know if there is any AutoCAD plugin to capture a GPS track but there might be other ways.
You can buy GPS receivers that store the track as a series of individual points with their lat/long locations and times for each point. It should not be difficult to import these into AutoCAD and join them together to show the track in an AutoCAD map. That is assuming the AutoCAD map contains the necessary basemap coordinates within it so the points from the track file will be positioned properly on the map.
That's only one example. There are others but they all relate to the ability of GPS receivers or GPS programs that can capture track data. Once you have that data there are many things you can do with it.
