If you want a head start on custom symbols you can download an .est map file that is full of them from here. After you've create a few yourself - it really is an easy way to personalize your map. I tend to use them all the time as I like my custom icons better than many of the built in icons.

Great question - there are at least a couple ways to get rid of the unwanted sets.
1) just right-click on the name of the previously imported custom pushpin set (in the legends and overview pane) and click "Delete" from the context menu that pops up.
2) click the name as above then press the Delete key on your keyboard.
