I'm using Garmin Mobile 10 XT (Bluetooth GPS included) What you like to move to or from the memory card using map source?

I am downloading a gpx file of geocaches from geocaching.com. I upload them to the XT using Mapsource but I cant find them in XT.

You have to use Garmin's POI Loader (its not the easiest program to use). Once you have transfered your GPX data to a folder that has nothing else in it. Now start the POI Loader program. Connect the memory card to a memory card reader or tether your Windows Mobile device to Active Sync, once connected go back to the POI Loader, let the program find the XT program then select Next button, then select the Install new custom POI's onto your device, Next button again, use the Browse button to find the folder that you put your GPX file in. Once found click Next again, then Finish. Now start up XT on your mobile device. Select Where to? then got Extra and there should be your Geo cache locations should be there.

One last question, can I group POI's into sub-directories on XT rather than having them all in one big list?

Kind of.

Here's what I have. I have 3 .gpx files in one folder, one file as red light cameras for my area. The second file has Geo cache locations and the third file has locations of WiFi hotspots I use as I travel around. Once I run the Garmin POI program on these files and upload them on the memory card. I can go to Extra and there will be three tabs that shows Red Lights, Geo cache, & Hotspots.
